Ok I was asked a few times to do a write up on my Chicken Fricase' Stew so here goes.
One of the first questions I always get is ....What is the difference between a fricase' and a stew?
A fricase' traditionally it is a method of cooking meat in which it is cut up,sauteed and braised, and served with its sauce. A stew is normally recognized as a meat that is cooked by simmering and boiling. So by definition this recipe is both a fricase' and stew.
This is really a delicious recipe packed with a lot of flavor!
-1/2 Cup all purpose flour
(I just recently switched to coconut flour and it worked great)
-2lbs of chicken
( sometimes I will use drums,thighs...the pictures here I used what I had which was breast meat)
-3 table spoons of olive oil
-1 pound of chorizo
-1 medium chopped onion
-2 cups diced potatoes
-1 red pepper sliced
2-chopped up tomatoes
-4 garlic gloves chopped or minced
-tablespoon of adobo
-1 packet of sazon
-1/2 cup of white wine
-1 cup of chicken stock
-salt and pepper to taste
DIRECTIONS
Rinse and season your chicken. Toss the chicken in flour.
Heat the olive oil in a large cast iron skillet, over medium-high heat. Add your chicken and sear until golden brown on all sides, about 4-6 minutes on each side. Remove the chicken and place into a large stew pot.
If you are using ground chorizo than pre cook and add to your chicken in the stew pot. If you are using sausage chorizo cut up and brown as well.
Add chopped onions, diced potatoes, juliened or slice peppers.
Add chopped tomatoes , minced garlic.
Add your seasoning...adobo, sazon, and salt and pepper to taste.
Stir in white wine and chicken broth.
Stir up all the ingredients to allow thejuices to flow to the bottom so that when you boil you do not burn the chicken or vegtables. When simmering it will rendering a ton of flavorful juices!
Bring the liquid up to a boil and reduce to a simmer. Cover and simmer for about 45-60 minutes. Until chicken is tender to shreds or falls off the bone.
I have a more traditional (Puerto Rican) Pollo Guisado Stew that I will be posting later on this week along with the cauliflour cheese bite recipe shown in the image above.
Traditionally I would always make pair this recipe up with white rice but in my attempts to eat healthier and low carb diet I made a brown rice to go with it.
