Jumbo Single Serve Upside Down Pineapple Cake

So let's talk New Years resolutions. How do you all feel about them? I normally don't like to make any but I did make an exception this year. I decided I was really going to try to learn to bake.

Not that I don't know the basics but I guess I just have never really enjoyed it and I hate to make my kids & Damien feel like they are missing out on eating yummy things just because I refuse to do it. So in a way this New Years I decided I would stretch myself and make things with baking that I normally would never consider doing.

I got started right away when I decided to have a New Years Day Party for my family. And a common baked good for a Puerto Rican family is an "Upside Down Pineapple Cake". Thanks to Pinterest I was able to create something for them but with a new twist. What I did were individual cakes for every one. I am so proud of my self!
Here is what I did and how they turned out.
Ingredients:
  • Jumbo Muffin Pan (Got mine at Walmart)
  • Duncan Hines Pineapple Supreme Mix (Sure could have made it myself but this mix is sooo YUMMY and works perfect)
  •   2 cans of Pineapples
  • A jar of Maraschino Cherries
  • 2/3 cups of packed Brown Sugar
  • 1/3 cup of melted Butter
  • 3 Eggs
  • 1/3 cup vegetable oil
Get your mix ready by following the box directions....

Drain the pineapples... I than cut a sliver out of my pineapples since
 they were just a nudge to big.
Cut your cherries in half.
 In a small bowl, combine the brown sugar and butter, mix well. 
Spoon in your butter mix into the Jumbo pan. Than layer your pineapple 
slices and cut cherries ontop of the brown sugar in the jumbo muffin pan.
 Than add your mix in. Make sure to not over fill the mix since it will rise. 
I only filled mine about 3/4 of the way up.
Bake at 350 degrees for about 20-25 minuted or until a toothpick comes out clean.
Wait about a minute before inverting but not too much longer as you want them to slide out smoothly.
Now since the bottom (which is your top) is rounded and to get them to lay flat the bottom has to be cut. So I waited till they were cooled (at least a good hour) and than used a serrated knife.
Not only do they make a GREAT presentation but taste DELICIOUS !!!!
